Best Recipe For Sweet Potato ‘Latkes’-Happy Thanksgiving

I still love the traditional sweet potato and marshmallow side dish, but this Thanksgiving, I wanted to add something new to the menu. This is a dish served during Hanukkah, but I thought it would pair nicely with stuffing and turkey.
Here's the basic recipe
1 lb of sweet potatoes, peeled and grated (with cheese grater)
2 small onions peeled
2 large eggs-beaten
1/3 cup of flour
2 tablespoons corn starch
1 teaspoon salt
1/2 teaspoon pepper
Sour cream
Cumin
In a bowl mix together sweet potatoes, onions, flour, corn starch, eggs, salt and pepper. Over medium-high heat, add oil to large skillet-preferably non-stick or cast iron if you have one
I form the latkes like hamburgers, only thinner. Work in batches of 4 for best results. Flatten them with your spatula and let them cook for about 2 minutes on each side-depending on how thin you make them. When they look golden brown and are crispy around the edges, transfer them to a plate with paper towel to absorb oil.
For sour cream dip: Combine 1/2 cup of sour cream with 1/2 teaspoon of cumin, or, add your favorite spices like cinnamon or ginger. Add a dollop to your latke and enjoy.
