Every time I make mashed potatoes, I usually end up with leftovers.  I hate to waste food, so I try and come up with some different ways to use it.  Here is an awesome way to turn those leftovers into a snack your kids will love!

Over the weekend, I had a house full of kids.  They wanted a snack and I had a bowl of leftover potatoes.  So I decided to make them a snack I knew they'd love.  There really isn't a name for it but I guess we could call it cheesy mashed potato patties.

You can pretty much use whatever ingredients you like.  I used shredded cheese and some chopped up green onions.  You mix that in with the cold mashed potatoes.  Then add a little flour and one slightly beaten egg.  I'd say for one tablespoon for every cup of potatoes you use.  Mix it up really well.

Next, get a shallow dish with about 1/2 cup of flour and set aside.  Using your hands get some of the mashed potato mixture and roll it into a ball.  Then, you use your palms to flatten and shape it.  It will look like a small pancake.  Once you have your patties ready to go, carefully coat them into the flour.

Now, heat a skillet with about 3-4 tablespoons of vegetable oil.  Carefully fry the patties on both sides until golden brown, about 3-4 minutes.  Do not overcrowd the pan and make sure they get crisp before you flip to soon or they won't crisp properly.

As soon as you pull them out of the skillet, place them on a paper towel lined plate to absorb the excess oil and sprinkle will a little salt.

I like to serve them to the kids with a side of sour cream.  They love them!  It is an easy little snack and no leftovers get wasted.  Enjoy!
